The Goose breast are placed in special tanks with its own special recipe of spices and salt, covered with water and placed in a special room where stationed at a controlled temperature for the time necessary to absorb the scents of spices and salt. Once the marinade begins the most delicate phase, that of smoking cold. Our technique provides for the exclusive use of beech wood moistened. After smoking the products are placed in the cells of aging for the last stage.
